Grandma's Cinnamon Stars

1 lb. sugar (castor)
6 egg whites
3 Tbsp. candied lemon peel (optional)
1 lb. nuts, chopped
1 Tbsp. cinnamon
⅓ cup flour
Beat egg whites until stiff, then gradually add sugar and cinnamon and beat until stiff and glossy (+/- 10 mins.) Take out about ¼ of meringue mix and set aside. Then fold in flour, nuts and lemon peel to remainder in mixing bowl. When combined, take small spoonfuls and slightly flatten on cookie sheet. Top each base with the meringue mix. Bake at 325° F. Watch carefully until just starting to turn slightly golden. Yields: 6 + dozen (½ recipe may be more than enough)
