Spaghetti and Meat Balls

MEAT  BALLS:
1 ½ lbs. Ground Beef
½ cup minced onion
¾ cup fine dry bread crumbs (or soda crackers)
1 ½ tsp.salt
1/8 tsp. pepper
1 egg
½ cup milk

Mix all ingredients.  Shape into balls.  Brown in hot fat.  Cook balls in Spaghetti Sauce.


SPAGHETTI SAUCE:
¾ cup chopped onion
1 clove garlic, minced
3 Tbsp. oil
2 - 1 lb. cans (or frozen) of tomatoes (4 cups)
2 - 6 oz. cans tomato paste
2 cups water
1 tsp. sugar
1 ½ tsp. salt
½  tsp. pepper
1 ½ tsp. dried oregano (Optional)
1 bay leaf

Cook onion and garlic in oil until tender.  Stir in next 8 ingredients.  Simmer uncovered 30 minutes; add meatballs.  Loosely cover and cook 30 min.  Serve over spaghetti.  Pass Parmesan cheese.  I usually put meatballs in sauce immediately and cook 1 ½ - 2 hrs.  Until consistency I want.  I do cover during all the cooking time.  Serves 6 -8
