Beef Pot Roast & Fluffy Dumplings

Prep Time: ½ hr. Cooking Time: 4 Hrs. + 20 Minutes for Dumplings Serves: 4-6
4 lb. Chuck Roast
2 lbs. carrots, 1.5"
1 Large Onion
4 Medium Potatoes ½' d
½ - 1 cup water
½ cup flour
1 tsp. salt
1 tsp. pepper
Combine the Flour with the Salt and Pepper. Rub this mix over the entire roast.
Heat 1 - 2 Tbsp. shortening in a frying pan. Brown the Roast on all sides in fry pan.
Peel and cut carrots in 1.5" lengths.
Cut/slice the onion thick. Place onions on bottom of roast pan. Place beef roast on top of onions. Pour Water in at base. Cover, place in oven for 3 Hrs. at 325°.
After roasting, add carrots and potatoes. Cover again and roast another 1 hour.
Remove Carrots and potatoes and keep them warm.
Pour off Beef juices to make gravy.
Add your Fluffy dumpling dough on top of the beef roast. Cover again and roast another 20 minutes
Fluffy Dumplings
Prep Time: 5 minutes, Cooking time: 20 minutes, Serves: 4-5 (12 dumplings)
1 egg
2/3 Cup milk
1½ Cup flour
3 tsp. baking powder
½ tsp. salt
Combine: Egg and Milk Beaten
Combine: Mix together Flour, Baking powder and Salt
Mix the Dry mixture with the liquid mixture. Place over the Roast and bake another 20 minutes @ 325° F. Covered.
Enjoy with gravy!
